Ingredients
Scale
- 1½ pounds of russet potatoes, diced into ½” cubes
- 1 pound of sliced smoked sausage
- 2 tablespoons of olive oil
- ½ teaspoon of seasoned salt
- ½ teaspoon of Italian Seasoning
- ½ large red bell pepper
- ½ large green bell pepper
- 1 small diced onion
- Black pepper to taste
- Shredded parmesan cheese (optional), for garnish
Instructions
- Sautéing the Onion: Begin by melting a spoonful of butter in a large pan over medium heat. Add the diced onion, stirring frequently, until it becomes translucent and soft. Once done, transfer the onion to a separate dish and set aside.
- Cooking the Potatoes: In the same skillet, heat 1 tablespoon of butter along with 1 tablespoon of olive oil. When the butter melts, add the diced potatoes. Season them with seasoned salt, Italian seasoning, and a dash of black pepper. Stir to ensure even coating.
- Simmering for Perfection: Cover the skillet and let the potatoes simmer. Stir occasionally for about 15 minutes, or until they start to soften.
- Adding the Sausage: Introduce the sliced smoked sausage to the skillet with the potatoes. Cook for an additional 10 minutes, ensuring the sausage is well-integrated and the potatoes are tender.
- Final Touch with Peppers: Add the previously sautéed onions back into the skillet along with the sliced red and green bell peppers. Sauté this mixture until the peppers are tender yet crisp.
- Garnishing: If desired, sprinkle shredded parmesan cheese over the top for a cheesy finish.
