Instructions
- Preheat and Prepare Pans: Start by preheating your oven to 350°F (175°C). Grease and flour the cake pans to ensure easy removal of the cakes after baking.
- Cake Batter Mixing: In a large mixing bowl, combine the cake mix with strawberry gelatin. Add in the pureed strawberries, eggs, vegetable oil, and water. Mix thoroughly until you achieve a smooth, homogenous batter.
- Baking the Cake: Divide the batter evenly between the two prepared cake pans. Bake for about 20 minutes. To check for doneness, insert a toothpick into the center of the cakes; it should come out clean when the cakes are ready.
- Making the Frosting: While the cakes are cooling, prepare the frosting. In a separate bowl, beat the softened butter and cream cheese until smooth. Blend in 1/4 cup of the strawberry puree and the strawberry extract. Gradually add the confectioners’ sugar, beating continuously until the frosting reaches a creamy, spreadable consistency.
- Frosting the Cake: Once the cakes have cooled completely, apply a generous amount of the strawberry cream cheese frosting between the layers and over the top and sides of the cake.
